They were domesticated and kept behind a fence. I tried feeding some frozen clover to one on my run, but it didn't seem to like that. I think the ones I snapped a picture of after I saw them crossing the stream were Beefalo - a cross between beef and bison. Yes I live in NC, and we saw lots of Bison/Buffalo.
